Some ‘of Clarity…

In the market today there are several definitions for a balsamic product and variations of toppings that use balsamic vinegar as an ingredient and for clarity we try to list a simple guide: 

  • Traditional Balsamic Vinegar of Modena PDO 
  • Traditional Balsamic Vinegar of Reggio Emilia PDO 
  • Balsamic Vinegar of Modena PGI 
  • Dressings made with Balsamic Vinegar of Modena PGI 
  • Creams or Glazes with Balsamic Vinegar of Modena PGI 

The first three have been previously described in the technical part. 

The toppings are obtained with cooked grape must and vinegar and may not even reach the acidity of 6% (typical of balsamic vinegar), so they can not be referred to Balsamic Vinegar of Modena. 

Glazes or balsamic creams are obtained with one part of Balsamic Vinegar of Modena PGI in addition to grape juice and corn starch.
